El Centro’s is pizza place located a bit off the beaten path for me, but after hearing a lot of good things I decided to take the venture out to see what these wings were all about.
Upon arrival I was greeted with ‘The Wing Master’ sign in the window, well that has to be a good indication!
10 wings will run you $12, and there is no Wing Night deal.
Going out for wings and getting a dry rub can sometimes be disappointing when you end up with a few speckles of spices scattered upon the wings, but that was not the case here. These wings were coated with a dry rub and it was a delight to see!
As this place is a take-out/delivery type joint, the wings were packed in a box for safe transportation on the way home, however I think that led to a degradation to the crispiness factor as there really wasn’t any breathing holes to let that steam escape. I am not a restaurant and I am not in the wing transportation business so there may be cons to having air holes, but I think it could be helpful to let some of that steam out to preserve the exterior.

The meat tasted good however a fair amount of the wings did contain a bit of darker type meat along the bone, more than what you would normally see. I was curious on what caused this so I did some Googling and found this explanation:
“Darkening around bones occurs primarily in young broiler-fryers. Since their bones have not calcified completely, pigment from the bone marrow can seep through the porous bones. When the chicken is cooked, the pigment turns dark. Freezing can also contribute to this seepage. It’s perfectly safe to eat chicken meat that turns dark near the bone during cooking.”
So, that’s that.
Both the flats and drums were a pretty good size, but not super meaty.

I’ve heard a lot of great things about these wings and I am very glad I finally had a chance to try them. Would I go back for these wings again? While they are not the best wings I’ve had, I would definitley go back for more and start knocking some of those dry rubs off the list.
